Lavon is from Springfield, Illinois. She serves on Illinois’ Community College Board working with several community colleges to develop local foods opportunities in their districts including curriculum and garden development, product marketing, farmer training and incubators. Lavon knows there are too many reasons to count regarding the importance of local foods. To her, local foods are another example of a way to strengthen the economic development and workforce of Illinois. Local foods can aid in keeping more money in Illinois while providing fresher and healthier food options.
